Serving size -2 , Preparation time- 5 minutes , Cooking time – 10 minutes

APPLE APRICOT SOUP

Ingredients

½ Apple (peeled)

½ carrot (peeled)

¼ potato (peeled)

2 dried apricots

1 tsp ghee

Jaggery (if required)

Method:-

  1. Dice apple, carrot, potato, apricot into cubes
  2. Put the above ingredients in a pressure cooker
  3. Add 1-2 cups of water and pressure cook for 2-3 whistles
  4. Cool the mixture and blend to a smooth paste
  5. Strain the mixture to avoid any lumps or vegetable chunks
  6. Pour the soup in a serving bowl, add ½ tsp ghee and jaggery if required
  7. Serve lukewarm
